12 oz white chocolate morsels
1 can of condensed milk
1 Lime
1 cup macadamia nuts

Place the can of condensed milk into the saucepan on high heat. Then stir in the white chocolate and stir until it is wholly melted. Make sure that the blend reaches a boil. When I was growing up as a small child, I always looked transmit to the homemade chocolate cakes that my grandmother would make for my Birthday. In our family, my grandmother was a dedicated baker and would bake something for us every day. Thankfully, she passed on her love for baking to me.

Banana Cake

Cake Ingredients:

1/2 pound butter, softened
5 eggs
2 cups granulated sugar
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 teaspoons vanilla extract
1/4 cup evaporated canned milk

Preheat oven to 350 degrees.

In a large mixing bowl, cream together the softened butter and granulated sugar. Slowly add in the eggs, one at a time, beating after each addition.

In a medium-sized mixing bowl, integrate the all-purpose flour, baking powder and salt. Slowly add 1/2 of the flour compound to the wet ingredients and beat for 1 minute. Pour in the 1/2 cup of milk and beat again, followed by the remaining flour mixture. Stir in the vanilla excerpt and beat again. Finally, stir in the 1/4 cup of evaporated milk and beat until all ingredients are well combined.

Note: If your batter seems beyond doubt stiff, add a tiny supplementary milk.

Lightly spray a 9 x 13" baking dish with nonstick cooking spray. Pour the batter into the pan. Bake in a 350 degree oven for 35 to 45 minutes or until cake is done in the center. Cool cake on a wire rack.

Chocolate Icing Ingredients:

2 1/2 squares baking chocolate
2 cups granulated sugar
1/2 cup evaporated milk
1 teaspoon butter, softened
1 teaspoon vanilla extract

In a large saucepan, melt the baking chocolate over low heat. Stir in the granulated sugar and evaporated milk. Bring to a boil and boil for 2 to 3 minutes or until a soft ball forms when dropped into cold water. Remove pan from heat and stir in the butter and vanilla extract. Beat icing by hand until it is thick sufficient to spread on your cooled cake.

Chocolate Cake Recipe

1/2 Cup of water

4 Ounces of semi sweet chocolate

1 Cup butter

2 Cups sugar

4 Egg yolks

1 Teaspoon of vanilla bean paste

2 1/2 Cups flour

1 Teaspoon of baking soda

1/2 Teaspoon of salt

1 Cup buttermilk

4 Egg whites Stiff peaks

Bring the water to a simmer, You will then add your chocolate and water over a duplicate boiler and melt the chocolate until it is smooth. You will remove from the duplicate boiler and cool down to room temperature. You will then start to mix your sugar, vanilla bean paste, and and butter until creamy, and then add in egg yolks one at a time until incorporated. You will need to make sure the chocolate compound is cooling down because you are going to start getting the rest of your ingredients ready to put them all together very soon.

We are ready to get the dry ingredients ready now. First thing you will need to do is get your dry ingredients ready at this point. You will need to sift the flour, soda, and salt. You will then add in buttermilk and give it a stir. Now you will add the buttermilk flour compound to the chocolate liquid and stir them just until they are incorporated.

I would preheat the oven to 350F degrees, so you can pour the batter and go directly into the oven. This is the last step of the chocolate cake batter. This is what is going to make the cake light and fluffy. You will need to whisk the egg whites until they form stiff peaks. You will add about a third of the stiff peaked egg whites in to the batter and fold gently into the chocolate mix, repeat two more times until all of the egg whites are folded in. Do not mix, but fold them into the batter. You will lose the lift the egg whites will produce.

Grease and flour two or three 9" circular pans, pour in the batter, and put into the oven. Bake at 350F for 30 to 40 minutes, remove and cool. When the toothpick comes out clean the cake is ready.

Ingredients for the coconut and pecan frosting:

1 Cup evaporated milk

1 Cup sugar

3 Beaten egg yolks

1/2 Cup of butter

1 Teaspoon of vanilla bean paste

1 Tablespoon of Meyers Dark Rum

1 Can of flaked coconut

1 Cup chopped pecans

In a bowl you will mix the milk, rum, sugar, yolks and butter. You will then heat in a pan stirring enduringly until it thickens, 10 minutes or so. Then pour into the vanilla bean paste, coconut and pecans, and let cool.

For the Chocolate Icing:

8 Ounces bittersweet or semisweet chocolate, chopped

2 Tablespoons light corn syrup

1 1/2 Ounces of unsalted butter

1 Cup heavy cream

1 Bag and a metal tip for the ring of frosting nearby the cake

Once that is complete you will add decorations on the top of the cake. You can do a attractive ring or anything you wish. Then serve

c. Cream butter until soft. Add sugar, eggs and Vanilla passage in medium speed.
d. Alternate putting in the flour compound with the milk/water mixture. Mix at low speed.
e. Put in muffin cups.
f. Bake for 20-25 minutes. Let cool before serving.

If you love good food, you'll love these two unusual Australian cake recipes are just great fresh from the oven.

The flavour of the pineapple in the Hummingbird Cake reminds me of the fabulous taste of pineapple upside down cake fresh from the oven.

Cake Recipes

The Tutti Fruity cake with it's tinned fruit salad reminds me of childhood puddings of fruit salad drowning in evaporated milk!

Both these recipes are low in fat and taste great fresh from the oven:-

Hummingbird Cake

2 egg whites

1/3 cup of sugar

1 teaspoon of bicarbonate of soda

½ cup of apple sauce (fresh or from a jar)

¾ cup of canned, crushed pineapple (or pineapple rings crushed with a fork) - drained

1 cup mashed bananas

1 teaspoon of mixed spice

2 cups self-raising flour

For the icing:-

1 cup of icing sugar

1 tablespoon of pineapple juice (reserve this when you drain the pineapple)

2 teaspoons of margarine

1. Set the oven to 180 degrees

2. Beat the egg whites and sugar together

3. Stir in the bicarbonate and apple sauce.

4. Now add the pineapple, bananas and mixed spice.

5. Fold in the flour moderately with a wooden spoon.

6. Pour into a cake tin.

7. Cook at 180 degrees for 35-40 minutes.

8. Once cooked take off from oven and allow to cool.

9. Mix the icing ingredients together and smooth over the top of the cake.

Serve & enjoy!

Yvette's Tutti Fruiti Bites Cake

2 egg whites

½ cup of sugar

½ cup apple sauce (fresh or from a jar)

¾ tsp bicarbonate of soda

440g can of fruit salad (drained)

2 cups of self-raising flour

Icing:-

¾ cup of icing sugar

1 tablespoon of passionfruit juice

1 teaspoon of margarine

1. Turn the oven to 180 degrees.

2. Beat the egg whites and sugar in a bowl.

3. Stir the bicarbonate into the apple sauce.

4. Add this to the bowl.

5. Add fruit salad.

6. moderately fold in the flour with a metal spoon.

7. Pour into a cake tin.

8. Cook at 180 degrees for 25 minutes

9. take off from oven and allow to cool

10. Mix icing ingredients together with a fork and smooth on the top of the cake.

Eat whilst fresh and still warm!

What You Need

1 cup sugar 2/3 cup softened butter or margarine 2 teaspoons vanilla 2 eggs 2 medium ripe mashed bananas ¼ cup sour cream 1 ½ cup all purpose flour 1 teaspoon baking soda

How to Make It

Preheat oven to 350 degree Fahrenheit.

Prepare two, 9-inch round baking pans by greasing and flouring and then set aside until needed.

Using a large mixing bowl incorporate the sugar, butter or margarine and vanilla and beat on low speed for about 1 to 2 minutes or until fluffy and light.

Continue beating, while adding one egg at a time for about 1 or 2 more minutes or until creamy in texture. Stir in the bananas, sour cream, and then fold in the flour and baking soda.

Pour into prepared baking pans and place in oven to bake for 20 to 25 minutes or until done. Check by inserting a wooden toothpick into center of cake until it comes out clean. Allow for cooling about 5 minutes and then remove from pan and set aside to cool completely.

Recipe for Chocolate Cream Icing

What You Need

1 ½ cup whipping cream 3 Tablespoons powdered sugar 1 teaspoon vanilla ½ cup melted semi-sweet chocolate chips 2 Tablespoons chopped pecans 2 sliced bananas

How to Make It

Prior to manufacture the chocolate cream icing for this old fashioned icebox banana cake, you will need to place a small mixing bowl in the refrigerator to chill until needed. Melt the chocolate and set aside until needed.

Using the small chilled mixing bowl, you will add the whipping cream and beat on a high speed until forming soft peaks. Gradually add the powdered sugar and vanilla and continue beating for 1 or 2 more minutes until forming stiff peaks.

Add the melted chocolate and continue beating for 1 slight until well mixed, but do not over beat. Set aside until needed for icing the cake.

Place 1 cake layer on the serving plate and then spread with half of the chocolate cream icing.

Slice 1 banana and then layer the slices on top of the chocolate cream icing. Top with remaining cake layer and then spread with the remaining chocolate cream icing to frost the cake.

Freeze or refrigerate the cake for at least 2 hours or even overnight. Serve by slicing the remaining banana and then arrange the slices nearby the exterior edges of the frosted cake. Sprinkle chopped pecan on the cake center. You may wish to serve immediately or you may want to place the cake in the refrigerator to forestall browning of the bananas until you are ready to serve.
