Directions:

Cut butter into small pieces so that it will melt easily. Put chocolate morsels, milk and butter into a microwave-approved bowl. Microwave at 50% power for 1 1/2 minutes. Remove fudge from microwave and stir. Put bowl back into microwave on 50% power for 5 minutes. Remove bowl from microwave and stir. If the fudge has not thoroughly melted, replace it into the microwave on 50% power for 5 minutes at a time. Stir in the middle of intervals until fudge is melted. Stir in pecans. Pour composition into 8-inch quadrate buttered pan. Refrigerate at least two hours. Cut into small squares.

2 cans (8-oz each) crushed pineapple in its own juice
1 1/2 cups butter, softened
3 cups sugar
5 eggs

3 cups cake flour
1 tsp lemon extract
1 tsp vanilla extract
Pineapple Filling; formula follows
Cream Cheese Frosting; formula follows
2 cups flaked coconut

Banana Cake

Preheat the oven to 350 degrees. Grease 4 9-inch round cake pans; line the bottoms with waxed paper. Grease and flour the waxed paper; set aside.

Drain the pineapple; retain the juice for the cake and frosting. retain the pineapple for the filling. Set both aside.

In a large mixing bowl, beat the butter on medium speed of an galvanic mixer until creamy. Gradually beat in the sugar until fluffy. Beat in the eggs, one at a time, beating well after each is added.

Stir together the lemon-lime soda and 1/3 cup of the reserved pineapple juice. With the mixer on low speed, beat the cake flour into the butter blend alternately with the soda mixture; begin and end with the cake flour. Beat in the lemon passage and the vanilla passage just until mixed in. Pour evenly into the four prepared pans.

Bake at 350 degrees for 25 to 30 minutes or until a wooden toothpick inserted in the town comes out clean. Cool for 10 minutes in the pans; remove from the pans to cool on wire racks. Cool completely.

To make the Pineapple Filling:

2 cups sugar
1/4 cup cornstarch
reserved pineapple
1 cup water

In a 2-quart saucepan stir together the sugar and cornstarch. Stir in the pineapple and the water. Cook the blend over medium heat, stirring constantly, until the blend boils and thickens. Allow to cool.

Place one cake layer on the bottom of the cake plate; spread the top with 1/2 cup of the filling. Repeat with th second,third, and fourth layers and the remaining filling, leaving a half-inch edge on the top.

To make the Cream Cheese Frosting:

1/2 cup butter
1 pkg (3-oz) cream cheese, softened
4 cups powdered sugar
1 tsp vanilla
3 to 4 tbsp of the reserved pineapple juice

Beat the butter ad cream cheese together in a large mixing bowl on medium speed until blended. Gradually beat in the powdered sugar, vanilla, and adequate of the pineapple juice to make the frosting spreadable. Frost the side of the cake. Pipe a border nearby the top edge of the cake. Sprinkle the coconut on the sides and decorative top edge of the cake.

Black Sambo was one of the first recipes I learned from my mum when I started my catering business back in 2006. When I introduced it to my friends, every person were quite amazed with how extraordinary it tasted. Today, it is one of the most ordered desert by my regular customers. Black Sambo is a two layered gelatin made of creamy milk and Chocolate. As I was browsing in the Internet, I came across some roughly the same recipes that made me want to share my own. I have invested in some plastic molders circular in shape that makes the Sambo so much prettier when presented.

First Layer:

Chocolate Cake Recipe

1/2 cup of Boiling Water
1 can Nestle Cream
1 can Condensed Milk (big)
2 envelopes Knox Gelatin (unflavored)

Procedure:

Mix preserve milk and Nestle Cream together until smooth

Dissolve gelatin in Boiling water, let it cool and strain.

Combine it together with the milk mixture. Chill in the refrigerator.

Second Layer:

1/2 cup Boiling Water
1/2 cup Hershey Chocolate powder
1 can Evaporated Milk (big)
3/4 cup Refined Sugar
2 envelopes Knox Gelatin (unflavored)

Procedure:

Combine sugar and chocolate powder together with the evaporated milk.

Mix well until smooth.

Dissolve gelatin in water then combine it with the milk mixture.

Once the first layer is roughly firm, put in the second layer slowly; let it chill. Note: It is best not to wait too long to put in the second layer so that both layers will stick to each other when you serve it.

This recipe is so easy to do-everyone should try it! You can serve it topped with Hershey Chocolate syrup or shredded chocolate but others prefer it as it is.

2 (6 oz.) packages semisweet chocolate chips

Chocolate Cake Recipe

1 (6 oz.) package milk chocolate chips

1 (14 oz.) can sweetened condensed milk (do not use evaporated milk)

1/2 to 1 cup nuts, chopped

1 1/2 teaspoon vanilla extract

Directions

Line an 8-inch or 9-inch quadrilateral baking pan with wax paper.

In a heavy saucepan, cook chocolate chips and milk over low heat until completely melted. Take off pan from heat. Stir in the nuts and the vanilla. Spread fudge pan and chill in the refrigerator for 2 hours, or until firm.

Cut into squares before serving.

Sell out the heat to a low setting and cook for an additional one 5 minutes until the marshmallows are melted; stir constantly. Take off pan from heat.

Stir in the chocolate chips, pecans and vanilla. Cook and stir until the chocolate chips are melted and all is well blended.

Pour fudge compound into baking pan. Chill in the refrigerator for 30 minutes, or until firm. Cut into Squares before serving.

In a saucepan, couple 1 cup of milk and the chocolate chips; stir over low heat until melted. Stir in the vanilla. Pour 1/2 of the compound into the ready baking pan and let cool for 10 minutes.

In an additional one saucepan, cook the white chocolate and remaining milk over low heat until chocolate is melted. Stir in the peppermint and green food coloring. Spread into baking pan over first layer. Let cool 10 minutes.

Pour remaining chocolate compound into baking pan over the mint layer. Let cool. Cut into squares before serving.

This build calls for a dome cake and a slightly wider, round cake layer. If you don't have a dome cake mold, use an oven-safe glass bowl.

Cake Decorating

Torte and fill the dome cake. Using green tinted buttercream, ice the round cake. Before the icing crusts, place the dome on top and ice it.

Give the leprechaun's hat a wide band that you create with chocolate buttercream or a ribbon of chocolate fondant. To pipe the hatband, you can use a strip of evenly cut paper to create an imprint, and then, using a star tip, fill in the band.

Next, pipe a gold buckle (with orange-yellow icing) onto the hatband. For a magical touch, apply edible gold glitter to the buckle.

Note: While edible gold glitter isn't cheap, you can find some good deals online. Large craft stores such as Michael's may also carry this.

Then pipe a large shamrock onto the hat. If you'd rather not do this freehand, make an imprint by pressing lightly onto the icing with a shamrock cookie cutter. Then using a start tip and dark green icing, fill in the shamrock. For an extra festive touch, serve with Irish Coffee.

Create a character cake with an easy-to-use character pan decorating kit, except add a St. Patrick's Day variation: whip up some green buttercream and add some leprechaun mischief like a green bow tie and shamrocks.
Decorate a sheet cake with an "end of the rainbow" scene. Ice the cake with pastel blue for the sky and green for the emerald meadow. Pipe tufts of green grass. Then using an icing bag, round tips and buttercream, decorate with a rainbow, white clouds and a pot of gold. Pipe gold nuggets and sprinkle with edible gold glitter. If you enjoy modeling with marzipan or sugarcraft, create a three-dimensional pot of gold filled with limited gold wrapped candies. Then pipe a St. Patrick's Day message. Highlight with edible gold glitter. Ultimately add leprechaun figurines, store bought or sugarcrafted.
Create a pot of gold cake. Ice a round cake or an upside down dome cake with yellow buttercream. Craft or purchase a rainbow arch that you can set up on the cake. Model nuggets and coins with marzipan or fondant, and then coat with edible gold glitter. Lavishly decorate the top of the cake with these.
Bake an Irish Coffee cake and liberally top with freshly whipped cream. Decorate with shamrock cake confetti and leprechaun party picks. Serve immediately.
Create a charming cake, literally. purchase Irish good luck charms, one for each guest. Thread each charm onto a clean, green ribbon. Bake an angel food or bundt cake and glaze. Drop the charms inside the center of the cake, and drape the ribbons over the cake. Before slicing, each guest draws a charm.
Alternatively, charms can be added as they often were to Victorian wedding cakes. To do so, bake round cakes. While filling, place the charms colse to next to the edge before placing the top layer. Allow the ribbons to emerge over the sides of the cake. After the cake is presented, each someone pulls a charm out.
Remember the green when selecting a cake recipe. Use white or yellow so that it can be honestly tinted green. You might even want a green filling such as pistachio pudding. Not nuts about pistachio? How about key lime?

Peel the limes and save the fruit for another use. Put the peel in a big pan with the brown sugar, cinnamon stick, and two cups of water. Cook the mixture over a moderate heat until it reaches 250 degrees F, stirring it all the time. You will need a candy thermometer to gauge the temperature.

Take out the peel and cinnamon and turn the heat down to low. Add the mashed sweet potato and keep stirring the mixture until it is smooth. Take it off the heat. Beat the cream, butter, egg yolks, and a pinch of salt until smooth, and then add this to the sweet potato mixture.

Cook it over a low heat for a concentrate of minutes, then take the pan off the heat and stir in the vanilla. Add in the vanilla bits, vanilla, walnuts and marshmallow crème, stirring until well blended. Pour fudge compound into the ready pan. Let cool. Cut into squares.

2 cups granulated sugar

1/2 cup dairy sour cream

Directions

Butter an 8-1/2 x 4-1/2-inch loaf pan.

In a microwaveable bowl, merge the sugar, sour cream, corn syrup, butter and salt. Microwave on high heat for 5 minutes. Stir well until the sugar is dissolved.

Microwave on high heat for other 6 minutes, or until the compound reaches 236 degrees on a candy thermometer. Let stand for 15 minutes (do not stir).

Add in the vanilla and beat the compound about 6 minutes (until it starts losing its gloss).

Stir in the cherries and walnuts. Pour into ready pan. Let cool. Cut into squares.

Christmas is my family's favorite time of year. We have many Christmas traditions that we've developed over the years.  One is that each year one of us daughters (mother and sister-in-laws) is responsible for a part of the dinner.  My favorite part to make is the Christmas desserts.

Our house is large, there are five sisters, four brothers and both parents still living. We also have a lot of wives, husbands, nieces and nephews mixed in. When we get together there are twenty seven people.  Each year one of us cooks for a distinct segment. We put the dinner segments in a hat. After dinner, after all the dishes are done and we're relaxing we choose what our dishes will be for the next year. The menu is broken up into appetizers, before and after dinner drinks (for the adults), meat, stuffing/potatoes (starch), vegetables, rolls, desserts. Two citizen are responsible for meat, two for stuffing/potatoes and two for vegetables. One for appetizers, one for before and after dinner drinks and one for desserts. And, now that there are ten of us every year one lucky girl gets a get out of jail free card, which means she doesn't have to cook the next year!

As I said earlier Christmas dessert is my favorite. I start cooking about a week in advance. I know everybody's favorites, and like to add a few new things.  I like to make lots of distinct types of desserts for the family. One of my favorites is Black lowest Cup Cakes. Someone else is Greek Almond Cookies. These are super simple. Someone else favorite is absolutely a Red Velvet Cake with Butter Cream Icing. It's my Grandmother's recipe and the house loves it. The Red Velvet Cake is the one thing we're guaranteed to have every year, regardless of who is assigned dessert duty.

I also make a Cinnamon Crumb Cake, a Chocolate Truffle with Raspberry Sauce and a Louisiana Roasted Pecan Pie.  All of these things make quite an impressive seeing Christmas dessert buffet and everybody is able to find something that they really like.

Over the years we girls have shared recipes between us.  We all love cooking, us sisters were all raised to enjoy being in the kitchen.  When a new item is introduced to the table there is also a menu card for each sister for that new item.  When I added Greek Almond Cookies to the dessert table last year everybody was amazed how easy the recipe is. I got it from an actual Greek friend, Valerie.  The Cinnamon Crumb Cake is also easy to make and goes really well with a cup of coffee after dinner.

One year when my sister-in-law picked the Christmas dessert measure of our meal I gave her a lot of advice on recipes as she really isn't comfortable baking. I went to her home two days before Christmas and helped her make the traditional Red Velvet Cake. She did it really well and is now a pro!

Perhaps if you have a large house you can do something like our house does. We all enjoy our Christmas cooking tradition.

Cupcakes have been colse to for a long time, and in general on the past be used as a fun thing for parents and child to make together, but now they are a versatile food that can be used in many dissimilar occasions. Sports cupcakes. I have previously made salutary cupcakes where I have included, raisins, banana and nuts to provide an power boosting pre-sports snack. The great thing about these was that cupcakes are easy to store and vehicle so they can of course be taken to the actual event.

As you can seen, the humble cupcake base as many applications, and of course is only slight by your imagination. Have fun with them and experiment, they are fairly cheap to make so it is not he end of the world if a batch doesn't quite work out and has to end up in the bin!

Large mixing bowl
Electric mixer (or elbow grease)
Wooden spoon

Ingredients:

1 cup (225g) of unsalted butter at room temperature
3.5 cups (450g) of sifted icing sugar
1 teaspoon of vanilla extract

For those of you who do not know, Malaysia is a multi-cultural country that made up from the Malays, Indians, Chinese and many other races. Every year, the Chinese would celebrate Chinese New Year.

During Chinese New Year, there's a very beloved and a must-have food to celebrate with. It is said to bring luck to every person in terms of finance, vocation and family. This is a cake that has been traditionally passed down from many generations thousands of years ago, it is call 'Nian Gao' or some habitancy call it Chinese New Year cake.

Cake Recipes

'Nian Gao' was told a story that Chinese has been using this cake to store as food for winter. This cake can be kept for long time without spoil and it provides power to our body while winter.

Last year, I've visited a installation that produces this cake and had met with its owner. I was very curious on how they indeed make this cake and I was asking for the cake's recipe. The owner didn't let me down from my sincere request, and so he gave the recipe to me. Below is the recipe that I would love to share with you.

Ingredients to prepare:

- 1 1/2 (325ml) cups water

- 2 1/2 (625ml) cups dark brown sugar

- 4 1/2 cups sweet glutinous rice flour

- 1/2 cup (125ml) vegetable oil

Instruction to make Nian Gao:

1. Pour the brown sugar and water into a small saucepan, bring it to slow boil. When it starts to boil, lower the heat and simmer for about 5 to 6 minutes until all the sugar has dissolved. Then allow it to cool to slightly warm temperature.

2. Add vegetable oil and mix (1) together thoroughly. Keep a 1/4 cup of the mixture in a cut off container.

3. Couple the glutinous rice flour with the oil, water and mixture (2) in a large bowl. Work straight through the batter well. It will turn very sticky and thick. Spend as much time as inherent to knead and work the mixture to a uniform consistency.

4. Use a 250 mm round tin cake or a round soufflé bowl of similar diameter. Oil the sides of the cake tin or bowl with some vegetable oil. Pour the batter into the cake tin or bowl. With wet fingers press the batter into the cake tin or bowl and dislodge any air pockets. Pour the reserved oil, sugar and water mixture on top.

5. Steam the cake over high heat for 4-5 hours. Make sure the water does not dry up or overtop the cake tin or bowl.

6. When the cake is done, remove from the steamer and allow cooling to room temperature.

7. For faster process, you can also cover it with foil and keep in the refrigerator to allow the cake to harden.

To serve, simply slice into wedges and serve in a plate. For those who prefer a soft texture, microwave for 20 seconds or steam on boiling water for 5 minutes until softened to the desired consistency.
