How to Make Cakes Like Grandma Made - Chocolate Potato Cake and Dark Spice Cake

Sometimes it seems like no one baked like my grandmas. Trips to their houses were all the time special and the cakes they would set out were something to remember. I lived next door to my maternal grandmother and never missed a day of visiting her house, especially her kitchen! My paternal grandmother lived a few miles on past us. I loved going there. First of all, I had an aunt only fourteen months older than myself. We enjoyed spending time together and were more like sisters than aunt and niece. But the best part was grandma's kitchen. She cooked on a big old cast iron wood fired stove. And there was all the time something over the warming oven that seemed to call to a young girl. And in the winter time, Southern Indiana winters were very cold and we did not have central heat, there was no place warmer than grandma's kitchen. In the summertime, while those hot humid Indiana summers, we would place on the steps to the food cellar where it was cooler. Since grandma would have the windows raised, we were often enticed into the kitchen by the smells wafting out the back windows. I loved my grandmothers and I love revisiting my memories of them. Here are some recipes from my grandmothers kitchens. Chocolate Potato Cake has a surprising ingredient of 1 cup of mashed potatoes in the batter. The Dark Spice Cake is made without eggs or milk manufacture it a unique recipe. These are not my primary recipes but these recipes are older than me (in my 60s) and most of my readers. I hope we will be allowed to release them as I know many of you would enjoying having them.

Chocolate Potato Cake

Chocolate Cake Recipe

2 cups flour
1/2 cup cocoa
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 cup shortening
2 cups sugar
4 eggs
1 cup mashed potatoes
1 tsp vanilla
1/3 cup milk
1 cup chopped nuts

Stir together the flour, cocoa, baking powder, salt and cinnamon. In a large mixing bowl, mix shortening and sugar beating until light; add eggs and beat until mixture is light and fluffy. Add the potatoes and vanilla mixing until well blended. Stir the flour mixture into the creamy mixture, alternating with the milk. Stir in the nuts. Pour into a greased 13 x 9x 2-inch pan. Bake at 350 degrees for 40 to 45 minutes. Frost with your beloved chocolate frosting or dust top with powdered sugar.

Dark Spice Cake

1 cup white sugar
1 cup raisins
1 cup water
1/3 cup lard
1 tsp nutmeg
1 tsp ground cloves
1 tsp cinnamon
1 tsp baking soda
1/2 cup cold water
1 tsp baking powder
2 cups flour

Preheat oven to 350 degrees.

Boil together sugar, raisins, 1 cup of water, lard, nutmeg, cloves, and cinnamon until the raisins soften, about 5 to 10 minutes. Allow the mixture to cool. Mix the soda in the 1/2 cup cold water and add to the raisin mixture. Add the baking powder and flour. Stir all ingredients together and pour into a well greased and floured 8 x 11-inch pan. Bake until done. This is not a typing mistake; no eggs or milk are used in this recipe.
