Friendship Cake

Have you ever had a friendship cake? The name comes from the starter sets being given to friends to make their own cakes, thus Friendship Cake. Each batch of fruit will make 3 cakes and 3 starter sets, 1 for yourself and 2 to give to friends. This is my husbands specialty and he makes these several times a year!

If you don't have a starter set you can make this blend and start your own!
The cake is nice and moist and full of fruit and I like it with a puny butter spread on it.

Cake Decorating

Brandied Fruit Cake - Friendship Cake

Use glass package to brandy fruit. Do Not put lid on tight! It must breathe.
Stir with a wooden spoon. You will have adequate starter juice to pass on to 2 to 3 people and keep one yourself.

Instructions and Ingredients

1 1/2 cups starter juice
2 1/2 cups sugar
1 qt. Sliced peaches with juice
Stir daily for 10 days.

On the 10th day add
2 1/2 cups sugar
1 pt. Can pineapple chunks with juice
Stir for 10 days.

On the 20th day add
2 - 9oz. Jars maraschino cherries (Drained)
Stir for 10 more days
on 30th day Bake Cake!

1 1/2 cups of the Brandied fruit drained
1 box yellow cake mix
2/3 cup vegetable oil
4 eggs
1 cup walnuts
1 small box French Vanilla instant pudding mix

Combine all ingredients, mix and bake in greased and floured Tube or Bundt pan.
Bake at 325 degrees for 1 hour.

You can also use a beater for this purpose but you will have to keep its speed very low because we just want the ingredients to be mixed together. Now add half cup of milk, raisins and mix using any flat spatula. In a convenient size baking pan, pour the batter and bake in preheated oven for 30-40 minutes at 180 degree centigrade. It is not indispensable that the baking time remains same as mentioned above. It may be more or less because depending upon the working of your oven. The best way to check the cake is when you start sensing its smell. At this point, insert a knife from top till deep down the lowest of your cake. If it comes out clear and dry then your raisin came is ready.

Place each ice cream ball into a wire frying basket or slotted spoon. Fry one or two of the balls at a time for 10 to 15 seconds, until the coating is a golden brown color. Drain on paper towels.

Method

- Preheat oven to 200 C.

- Grease and line a nine-inch by four-inch loaf tin.

- Sieve whole wheat flour, refined flour, baking powder, salt, cinnamon powder and nutmeg powder.

- Cream butter and brown sugar together in a bowl till light. Add mashed bananas, vanilla essence and mix.

- Beat eggs with a hand blender till light and fluffy.

- Add one third of the flour mixture to the banana mixture. Add one third of the beaten eggs and mix with a light hand. Again add one third of the flour and one third of the eggs and mix. Add the remaining flour, walnuts and the remaining eggs and mix.

- Add milk to literal, the consistency of the batter.

- Put the batter into the prepared tin and place it in the preheated oven. Bake at 200 C for 40 minutes.

- Check if it is done by inserting a skewer. If it comes out clean it is done. If not, keep the tin back in the oven and bake for other 10 to 15 minutes.

- Cool it before cutting into slice

The purist in me wishes cakes made from scratch with whole wheat flour and other more healthy ingredients were met with such excitement, but sadly they're not. The savvy realist within me admits that cake mix recipes often turn out better than from scratch cakes. They are more consistent, with better texture, especially when you know how to "doctor them up." And in the final analysis, life is too short to eat anyone less than delicious cake.

Have I mentioned that I am a huge fan of Anne Byrn, The Cake Mix Doctor? everything I've ever made from her cookbooks has turned out great, but I've been reluctant to admit it, until I learned that Jamie Lee Curtis recently declared The Cake Mix physician her favorite cookbook on the Rachel Ray Show!

This method is from The Cake Mix physician Returns. I made a few changes to the customary recipe. I omitted the added 1/4 cup of sugar, replaced the 1/2 cup sour cream with plain yogurt, and skipped the 3/4 cup finely chopped pecans to keep it friendly for those who have nut allergies. I also added 2 tablespoons of flour which is a trick my mum learned from her Home Ec teacher decades ago to help cake mix cakes be less crumbly.

Simple Banana Cake Recipe

Serves 16 to 20 or 12 to 16 as a bundt cake

Vegetable oil spray for coating the pan

Flour for dusting the pan

1 cup mashed bananas (from 2 or 3 very ripe bananas)

1 package (18.25 ounces) plain yellow cake mix

2 tablespoons flour

1/4 cup sugar (optional)

3/4 cup vegetable oil

1/2 cup sour cream or plain yogurt

4 large eggs

2 teaspoons pure vanilla

1 cup (6 ounces) petite chocolate chips

3/4 cup finely chopped pecans (optional)

2 teaspoon confectioners' sugar, for dusting on top

Position an a rack in the center of the oven and preheat oven to 350 degrees F. Lightly mist a 13×9 inch metal cake pan (or bunt pan) with vegetable oil spray. Dust with flour, shake out the excess flour and set the pan aside.

In a large mixing bowl, place the mashed bananas, cake mix,flour, sugar (if using), oil, sour cream, eggs and vanilla. Beat with an electric mixer on low speed until the ingredients are incorporated, about 30 seconds. Stop the mixer and scrape down the sides of the bowl with a rubber spatula. Beat on medium speed until the aggregate lightens and is smooth, about 1 1/2 minutes longer. Scrape down the sides of the bowl again, if necessary. Stir in the chocolate chips.( If you are intending to bake the cake in a bundt pan, stir in the pecans too, if you are using them.)

Pour the batter into the prepared cake pan. Smooth out the top with a rubber spatula. If you are baking the cake in a 9×13-inch pan, scatter the pecans (if using) evenly over the top and place the pan in the oven.

Bake the cake until is deeply golden brown on top and the top springs back when lightly pressed with your finger, 43 to 48 minutes (50 to 55 minutes for a bundt cake). Remove the cake from the oven and immediately sift the confectioners sugar over the top so that it melts to form a glaze. Let the cake cook for 20 minutes, then slice and serve while still a petite warm. (If you are using a bundt pan, allow it to cool for about 10 minutes, then turn it out of the pan and sprinkle with the sugar.)

Storage: Store this cake, covered, at room temperature for up to three days or for up to one week in the refrigerator.

2 lbs. Flour 1/4 lb. Shortening 4 tsp. Baking powder 2 tsp. Salt Cream from 1 coconut, or 1 tin Coconut Cream (8 oz.)

Method: Place flour in mixing bowl and add all dry ingredients. Work in shortening with fingers. Gradually add coconut cream and mix until dough handle unquestionably without being too sticky, or dry. If too sticky, add a bit more flour. Knead until smooth. Cut into desired size (golf ball size works well) and shape into a ball. Let rest about 10 minutes, then flatten to about 1/2" thickness onto baking sheet. Prick top with fork four or five times.

Bake in preheated oven at 450 degrees F. Until golden brown, or about 15 minutes. Once cooked split open and butter while hot.

Heat oven until 2200 C, 4000 F

Method:

Combine all things and mix well, and place in a greased bundt tin or a fluted ring tin to give the hole in the center. Bake for about half an hour until firm and cooked through. When a skewer comes out clean, the cake is cooked. Cool in the tin, refrigerate for a few hours, and then serve with cream.

Flourless Black Forest Gateaux

Serve warm with ice cream or whipped cream, or naturally dusted with icing sugar. To keep this recipe totally flour free dust the tin with cacao.

Ingredients:

Cake:

4 (1 ounce) squares semisweet chocolate, chopped

1/2 cup butter

3/4 cup white sugar

1/2 cup cocoa powder

3 eggs, beaten

1 teaspoon pure vanilla extract

a jar of Morello or Sweet cherries in natural juice.

1 Tub of thick whipping cream.

Preheat oven to 3000degrees F or 1500 degrees C.

Method:

Grease an oblong Swiss roll tin, or a jelly pan and dust with cocoa powder. Melt the chocolate in a bowl over boiling water, but do not let the bowl touch the water. When the chocolate is melted, add the butter. Remove from heat, and stir in sugar, cocoa powder, eggs, and vanilla. Pour into the prepared pan. Bake in preheated oven for 30 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Place powdered sugar or cocoa powder on a piece of kitchen paper and place the cake on it. Drain the jar of morello cherries and whip the cream until it holds its shape; then add the cherries. Place on top of the cake and roll up like a roll. Top with grated chocolate and serve with cream.

Healthy Fruit Cake

This recipe makes an exquisite cutting cake. To make a 11/2 lb cake in an 8" tin:

Ingredients:

1 large banana, as green as possible

1 large carrot, peeled and grated

2 eggs 100 ml olive oil

4 oz (100g)granulated sugar

1 table spoon of black treacle/ molasses

8 oz (200g)gluten free flour mix

1/2 teaspoon of bicarbonate of soda

1/4 teaspoon of cream of tartar

1 level teaspoon of mixed spice

1 level teaspoon of ground ginger

1 level teaspoon of cinnamon

8 oz (200g) mixed dried fruit

several glace cherries green and red

Preheated oven, 350°F or 180°C

Method:

Beat the banana and carrot to a flat puree with the olive oil, sugar and egg in a food processor. Add the flour and beat in. Add the treacle, spices, and raising agents and beat in. Add the fruit and beat in. Pour the mixture immediately into a deep 8" cake or 2 lb loaf tin lined with a layer of non-stick baking paper. Bake for 11/4 to 11/2 hours.

Chocolate Almond Gateau

Ingredients:

Cake:

110g/4oz best-quality dark chocolate (70 percent cocoa solids)

2 tablespoons white rum 110g/4oz whole almonds

110g/4oz butter, preferably unsalted

110g/4oz caster sugar, plus 1 tbsp extra, to mix with the egg whites

3 eggs, preferably free-range, separated

For the chocolate icing:

110g (4oz) best-quality dark chocolate (70 percent cocoa solids)

2 Tablespoons white rum

110g/4oz unsalted butter

To decorate:

crystallized violets

flaked almonds

You will also need 2 x 18cm/7in sandwich tins.

Method:

Preheat the oven to 180C/350F/Gas 4. Line the base of each of the tins with greaseproof paper. Brush the lowest and sides with melted butter and dust with a dinky rice flour. Melt the chocolate with the rum in a heatproof bowl over a pan of simmering water or in a low oven. Bring a small saucepan of water to the boil and add the almonds. Bring back to the boil for 2-3 minutes and then test an almond to see if the skin is loose. Drain the almonds, peel and discard the skins. Grind the whole almonds in a food processor until they are slightly gritty.

Cream the butter and add the sugar. Beat until pale, light and soft. Beat in the egg yolks, one by one. Whisk the egg whites until stiff. Add the extra tablespoon of sugar and continue to whisk until stiff peaks form, then add the melted chocolate to the butter and sugar mixture. Divide the prepared almonds into four portions. Add one measure to the creamed mixture. Fold in a quarter of the egg white, followed by more almonds. Fold in the remaining eggs and almonds alternately until they have all been added. Divide the mixture in the middle of the two prepared tins and make a hollow in the town of each cake. Bake in the oven for 20-25 minutes. The sides should be cooked but the town still a dinky unset. Leave to cool for a few minutes in the tins; them Remove them from the tin. Allow the cake to cool wholly before frosting.

To make the icing, melt the chocolate with the rum in a heatproof bowl over a pan of simmering water or in a low oven. Whisk in the butter, a tablespoon at a time, until melted. Remove from the heat and whisk occasionally until cool. If the icing seems too runny, put the bowl in the fridge and allow to firm up. Whisk to lighten and then use. When the cake is wholly cold, fill and ice with the chocolate mixture. (If you want to cover the sides and pipe a border nearby the top, make 11/2 times the quantity of icing.) 3 Ounces of confectioners sugar

Prepare instant pudding according to package directions. While pudding is chilling consequent directions for thawing, unfolding and baking puff pastry sheets.
