1. Using the right amount of shorting will preclude the frosting sheet from slipping or bunching up when being cut. Use a pastry brush and apply a thin transparent sheet on the cutting mat. If the shorting gets to warm just put the mat in the freezer for a couple of minutes. Make sure you apply shorting to the back of the frosting sheet as well as the mat, smoothing out all air bubbles.

2. Since you can not re-roll frosting sheets you will want to make every inch count. As long as the left over sheet is larger than 3" x 3" it is safe to reuse.

Friendship Cake

Friendship Cake

Have you ever had a friendship cake? The name comes from the starter sets being given to friends to make their own cakes, thus Friendship Cake. Each batch of fruit will make 3 cakes and 3 starter sets, 1 for yourself and 2 to give to friends. This is my husbands specialty and he makes these several times a year!

If you don't have a starter set you can make this blend and start your own!
The cake is nice and moist and full of fruit and I like it with a puny butter spread on it.
