Christmas evening meal Traditions and dessert Ideas

Christmas is my family's favorite time of year. We have many Christmas traditions that we've developed over the years.  One is that each year one of us daughters (mother and sister-in-laws) is responsible for a part of the dinner.  My favorite part to make is the Christmas desserts.

Our house is large, there are five sisters, four brothers and both parents still living. We also have a lot of wives, husbands, nieces and nephews mixed in. When we get together there are twenty seven people.  Each year one of us cooks for a distinct segment. We put the dinner segments in a hat. After dinner, after all the dishes are done and we're relaxing we choose what our dishes will be for the next year. The menu is broken up into appetizers, before and after dinner drinks (for the adults), meat, stuffing/potatoes (starch), vegetables, rolls, desserts. Two citizen are responsible for meat, two for stuffing/potatoes and two for vegetables. One for appetizers, one for before and after dinner drinks and one for desserts. And, now that there are ten of us every year one lucky girl gets a get out of jail free card, which means she doesn't have to cook the next year!

Cake Recipes

As I said earlier Christmas dessert is my favorite. I start cooking about a week in advance. I know everybody's favorites, and like to add a few new things.  I like to make lots of distinct types of desserts for the family. One of my favorites is Black lowest Cup Cakes. Someone else is Greek Almond Cookies. These are super simple. Someone else favorite is absolutely a Red Velvet Cake with Butter Cream Icing. It's my Grandmother's recipe and the house loves it. The Red Velvet Cake is the one thing we're guaranteed to have every year, regardless of who is assigned dessert duty.

I also make a Cinnamon Crumb Cake, a Chocolate Truffle with Raspberry Sauce and a Louisiana Roasted Pecan Pie.  All of these things make quite an impressive seeing Christmas dessert buffet and everybody is able to find something that they really like.

Over the years we girls have shared recipes between us.  We all love cooking, us sisters were all raised to enjoy being in the kitchen.  When a new item is introduced to the table there is also a menu card for each sister for that new item.  When I added Greek Almond Cookies to the dessert table last year everybody was amazed how easy the recipe is. I got it from an actual Greek friend, Valerie.  The Cinnamon Crumb Cake is also easy to make and goes really well with a cup of coffee after dinner.

One year when my sister-in-law picked the Christmas dessert measure of our meal I gave her a lot of advice on recipes as she really isn't comfortable baking. I went to her home two days before Christmas and helped her make the traditional Red Velvet Cake. She did it really well and is now a pro!

Perhaps if you have a large house you can do something like our house does. We all enjoy our Christmas cooking tradition.

A traditional Napoleon is a French dessert made from layers of puff pastry spread with a vanilla pastry cream. The top of the rectangle or triangular shaped sweet is drizzled with chocolate and or dusted with powdered sugar. Historians say that the Napoleon was created by a Danish royal chef in honor of a visit by a French emperor. And that Emperor Bonaparte's defeat at Waterloo was the consequent of an overindulgence of his now notable namesake pastry.

You may have a hard time distinguishing after eating a Napoleon what part is the best part. Is it the puff pastry or the pastry cream? I think all of the flavor combinations work very well together, so, I say all of it! This is a very quick and easy dessert recipe, and you will not spend all day in the kitchen. We are going to take the shortcut recipe and make it work for our recipe.

Cake Recipes

Making puff pastry from scratch is not an easy task to undertake. It is a labor and time oppressive endeavor. Perfectly chilled ingredients, repeated rolling to the accurate thickness, and precision folding are the keys to complete puff pastry. Not to mention working in a kitchen that is not humid. The right rolling and folding, along with the moisture in the butter, creates steam which causes the dough to puff and isolate into the flaky layers that the pastry is known for. Some chef's advise in any place from thirty minutes to two hours chilling time in the middle of rolling and folding. reconsider that the roll, fold and chill process is done four times, you need to block off two to eight hours to make puff pastry. Or, take a trip to the frosty food section of the grocery store and buy it.

1 package of frosty puff pastry dough

2 Packages of Vanilla instant pudding

3 Ounces of confectioners sugar

Prepare instant pudding according to package directions. While pudding is chilling consequent directions for thawing, unfolding and baking puff pastry sheets. Cut into desired shape at bake at 400° for twelve minutes or until golden. Pay close attention to baking time, sheets burn easily. Let cool to room temperature.

To assemble you will place a layer of pastry in bottom of a sheet pan. You will then gradually spread with a layer of pudding, then other layer of pastry. Repeat the layering process until ingredients are used up. You will then heat your chocolate fudge until it is at a pouring consistency. You will pour or drizzle over the tops of your Napoleons, and dust very lightly with the confectioners sugar. You will need a serrated knife to cut these into bars to sreve. Keep refrigerated until serving time.

If you want to substitute a low fat, or zero fat pudding in this recipe, there is still enough sugar to give it flavor with half or no fat in the pudding.

Stir to dissolve the pudding mix and then fold in the whipped topping. Hawaiian Luscious Luau Cake

Banana Cake

1 box yellow cake mix
1/2 cup vegetable oil
1 can (16-oz) mandarin oranges, drained
4 eggs
1 carton (16-oz) icy whipped topping, thawed
1 can (16-oz) crushed pineapple, drained
1 large box instant vanilla pudding mix

In a large bowl, mix together the cake mix, vegetable oil, oranges, and eggs. Pour into the prepared cake pans and bake at 350 degrees for 25 minutes. Cool in pans until cakes will come out easily. Place 1 layer on the serving plate and one on a wire rack.

Mix the whipped topping, pineapple, and pudding mix together. If too thick to spread, add a small number of the pineapple juice at a time until it reaches spreading consistency. Spread over top of cake layer on the serving plate. Top with the second layer. Spread remaining compound over the top and sides of the cake.

Oma'S Black Forest Cake

2 cans (20-oz) cans tart pitted cherries, undrained
1 cup granulated sugar
1/4 cup cornstarch
1 1/2 tsp vanilla extract
2 (9-inch) baked chocolate cake layers, cooled
3 cups cold whipping cream
1/3 cup powdered sugar

Drain cherries, reserving 1/2 cup of the juice. consolidate reserved cherry juice, cherries, granulated sugar, and cornstarch in a saucepan. Turn heat to a low setting and cook, stirring, until thickened. Add the vanilla passage and stir to blend.

Split each of the cake layers in half horizontally. Crumble one of the half layers and set aside. Place one of the cake layers on the serving plate. Set other two aside.

Beat the cold whipping cream and the powdered sugar together in a large mixing bowl using an galvanic mixer set on high speed. Beat until stiff peaks form. Retain 1 1/2 cups whipped cream for piping, if desired. Spread 1 cup of the whipped cream on the layer on the serving plate. Top with 3/4 cup cherry topping. Top with the second layer, 1 cup whipped cream, and the 3/4 cup cherry topping; top with the third layer. Frost sides of cake with the remaining whipped cream. Pat the reserved cake crumbs moderately on the sides of the cake. Spoon the remaining whipped cream into a pastry bag with a star tip; pipe around the edges of the cake. Spoon the remaining cherry topping over the top of the cake.

Ingredients:

9 ounces unsalted butter, diced

Chocolate Cake Recipe

9 ounces of dark chocolate (approx. 50% cocoa solids), broken into pieces

5 medium eggs, separated, whites from the yolks

9 ounces of sugar

1 Tablespoon of water

Glaze or Ganash:

5.25 ounces of dark chocolate, broken into pieces

2 Ounces of Heavy Cream

2 Tablespoons brandy

Garnish:

4 Ounces of powdered sugar and a sifter for dusting , and a doily to use as the mold for dusting a institute on top of the cake

1 Sprig of Mint for the top as garnish

Directions for making the no bake chocolate cake recipe:

Preheat the oven to 325 for a gas oven, and 350 for an electric oven. You will need a 9 inch cake pan with a movable base, to add the cake blend to before baking. In a pan over a duplicate boiler you will melt the chocolate, and the butter, stirring often, and be rigorous not to burn. Once it is totally melted take off from the duplicate boiler, and wait to add the rest of the mixtures below as follows.

In a cut off bowl you will whisk the egg yolks with half of the sugar for a few minutes until the egg yolk and sugar blend is a pale yellow. This is done to make sure that the egg yolks are cooked, and the sugar is melted.

In a cut off bowl you will whisk the egg whites with the other half of the sugar until they reach stiff peaks. When you have complete whisking you should have what is called a meringue, and it should be stiff and shiny.

You will then start to fold in the semi cool chocolate, and butter, into the yolks egg mixture, then the egg whites, you will do this in 1/3's on each mixture. Make sure to fold in and not mix. You do not want to overwork, if you do the cake will be very dense instead of light and fluffy. Pour the blend into the ready tin and bake for 25-30 minutes, or until done, when a tooth pick is inserted in the center, and comes out clear.

When the cake is cooked until done, you will take off the cake from the oven. You will then take a knife and insert it, and run it on the inside of the cake mold, and the surface of the cake. You are clearing the sides from the ring mold, and leave it to cool in the tin, on a wire rack. The wire rack will help air to circulate on the bottom so it will cool evenly, and it will cool somewhat faster. It will also help eliminate a soggy bottom, or center. The sides of the cake may shrink in some, or maybe even quite a bit that will be okay. You can trim the cake if you like, if the appearance is not an issue, that is all good, too.

While the cake is cooling melt the ganash, or glaze over a duplicate boiler. You will do this with the chocolate, and the heavy cream stirring over a low to medium heat until all is melted. You will then add your Brandy and stir. You will then take off the cake ring or cake collar while leaving the cake on the base, place it on a plate or cake board. Trickle the icing over the top and edges, allowing it to run over. You will set the cake in a cool place or on a cooling rack for any hours for the icing to set.

Before you are ready for assistance you will use your doily at this time to make a pattern that you desire, and dust lightly over it, to make a institute on the top of your cake. Do not touch the doily to the top of the cake just place about an inch or two above the top of the cake. Add your mint spring atop of the cake for the finishing touches.
